Peanut Butter Cookies

Bake: 350 degrees for 10 minutes

I’ve been working on creating an easy, “good” cookie – one that I can eat knowing it is giving my body good things … WHILE being deliciously munchy … you know, when you just want to *snack*. Well, these are a win!

  • 1 egg, whisked
  • 2 TBL flaxseed meal + 6 TBL water, whisked into egg

Then add

  • 1 tsp vanilla + 1/2 tsp stevia; OR 3 squirts of vanilla Stevia Drops
  • 1/4 tsp salt (1/8 also sufficient if you want less salt)
  • 1/4 tsp baking soda
  • 1 cup coconut flour
  • 1/2 tsp rosemary powder
  • 1/4 tsp psyllium husk
  • 1 cup peanut butter ( a brand that is *just* peanuts, oil, salt … like Wellsley Farm brand at BJs)

Then mix this all together. It should be the consistency of fun Play-Doh. If it is not, add a tablespoon of water at a time until you get there. Form your fun Play-Doh into small balls, squish slightly into ellipses (disks) and then bake at 350 degrees for 10 minutes.

Lemon Peanut Butter Cookie Variation!!!

Make a minor variation to the above and turn this cookie into something (imo) amazing! Instead of “6 Tablespoon Water” referenced above when mixing with eggs do this:

Fully zest a lemon (get as much as you can – but use an organic UNwaxed lemon if you are zesting!)

Juice the lemon. Use the lemon juice INSTEAD of water…topping off with some water to get to 6 TBL. Add liquid and zest. Make cookies as above.

Orange Almond Butter Variation!!!

Make a minor variation to the main recipe above and turn this cookie into something (imo) amazing! Instead of “6 Tablespoon Water” referenced above when mixing with eggs do this:

Fully zest a orange (get as much as you can – but use an organic UNwaxed orange if you are zesting!)

Orange zest is also high in fiber and flavonoids as well as vitamins A, C, B5 and B6, plus calcium, riboflavin, thiamin, niacin and folate.
