Fennel contains a unique combination of phytonutrients and has strong antioxidant capability.
- 4 apples, sliced into smaller pieces as you would for an apple pie
- fresh fennel, chopped small. Bulb and green fronds.
- Raw chicken, cut up into small chunks
- garlic 4 cloves
- salt and pepper
- 1 Tbl avocado oil
Preheat oven to 375, and bake for 30 minutes or until chicken juices run clear when cut.
The amounts above are approximate – this is Not a exacting dish- just wing it and have fun! I usually aim for twice as much chicken as there is fennel and apple since the chicken shrinks. You can thrown in chopped onion too. Can bake in a large pyrex or on a baking sheet. Pile everything on the sheet and then drizzle a little oil on top and mix it all together, then spread it out to cook.
