- 1 pkg extra-firm tofu – organic is critical here. (BJ’s sells a 2 pack)
- 2/3 cup wild blueberries (preferably organic)
- 1/3 cup canned full-fat coconut milk
- 1/2 tsp vanilla
- 1/8 tsp salt
- 1/4 tsp psyllium husk
- 1/2 tsp stevia

Blend all ingredients in a high-speed blender until smooth and creamy. I use a Vitamix blender. Pour into an 8″x6″ baking dish and bake at 300 for 40 minutes.
Now if you want to add a crust to this, you can. It’ll seem like even a purer dessert experience…I am unfortunately typically too lazy for these extra steps .
