Blueberry “Cheesecake”

Guilt-free foods that *feel* like naughty indulgences? Yes, please! This cheesecake is creamy and sweet yet packs a powerful punch of protein, healthy fat, dietary fiber, and blueberry power! Enjoy as breakfast and start the day off with the treat you deserve!

  • 1 pkg extra-firm tofu – organic is critical here. (BJ’s sells a 2 pack)
  • 2/3 cup wild blueberries (preferably organic)
  • 1/3 cup canned full-fat coconut milk
  • 1/2 tsp vanilla
  • 1/8 tsp salt
  • 1/4 tsp psyllium husk
  • 1/2 tsp stevia

Blend all ingredients in a high-speed blender until smooth and creamy. I use a Vitamix blender. Pour into an 8″x6″ baking dish and bake at 300 for 40 minutes.

Now if you want to add a crust to this, you can. It’ll seem like even a purer dessert experience…I am unfortunately typically too lazy for these extra steps .
