Pie Crust

Pulse briefly in food processor

  • 2 cups almond flour
  • 1/4 tsp salt

Mix longer in food processor until a ball forms:

  • 2 Tbl coconut oil (Melted) (or avocado oil)
  • 1 egg (OR substitute with a “flax egg”) See below.

Press flat into bottom of a baking dish. Bake at 350 for 5-8 minutes. If the pie is already being baked, you may be able to get away without prebaking the crust if the filling is not too liquidy (like pumpkin pie).

Flax “Egg”

Egg can easily be replaced in most recipes with flax meal. (flaxseed meal) You’ll want to buy ground flax meal. Flax meal will not be used up quickly (you don’t use that much per recipe) but it doesn’t have the longest shelf life … you want to keep those awesome omega-3 fats nice and fresh! When i buy a package of flax meal, i separate it into two ball jars. One goes into the freezer, and one goes into the fridge. I use the flax from the fridge till empty then backfill from the freezer.

1 egg = 1 Tbl Flaxseed meal + 3 Tbl water

Mix and allow to set for a couple minutes to thicken. Then add to recipe.
