- Clean mushrooms from any visible dirt while trying not to waterlog the gills
- Dry and coat with avocado oil
- Leave them gills up from now on
- Drizzle generously in the ‘cup’ with tamari (gluten free soy sauce)
- Top with finely diced onion and garlic
- Add salt, pepper, and a bit of oregano
