Slow cooker meat and Veggie meals are a mainstay of any meal plan because they are win-win. They are 70% vegetable, 30% meat, are super easy, and give awesome leftovers. What’s not to love. They are also super versatile and can make a large variety of meals. Basically it is choose 1. meat 2. veggies 3. spices/herbs
Meat can be any roast: beef, pork, etc
Vegetables: Any. Frozen is very quick and convenient – pour in the crock pot straight from the freezer.
- Add meat of choice
- Add 2 cups broth or bone broth
- Add 1/2 tsp psyllium husk powder
- Add several shakes of dulse flakes/salt/pepper
- Then fill up with vegetables: brocolli, cauliflower, summer squashes, carrots, onion, garlic …
- Add spices that inspire you that day…

Today was a pork roast, topped with 2 bags of “riced cauliflower” and a bag of petite fresh carrots. It literally took, like, no work. Then I added a Tbl each of Sage, Rosemary and Parsley.
Next week it could be marjoram, oregano, onion and garlic. The next week curry with squash! Yumm.
Also, you can mod this into a ‘stew’ by increasing the broth and psyllium. The psyllium is an awesome thickener, but go easy in the crockpot as i discovered there is a threshold where it no longer qualifies as ‘thick’ and instead has graduated to ‘gummy’. Bleh.
